Organic Jaggery (Gud) it is basically unrefined sugar which is obtained from raw, concentrated sugarcane juice. It is prepared by boiling sugar cane juice till it solidifies and then put into blocks. Many Rajasthani sweet dishes like lapsi, kheech, churma ladoo etc being made with gur/gud or jaggery. It goes best with Bajra Sogra or Dal bati Churma. Jaggery is a traditional sweetener made by evaporating raw sugarcane juice without separating the molasses from the crystals. It is softer and has lot of nutritious content.
